Near the Dinghao Shopping District in Taipei’s Eastern District“Dinghao Shaomian Noodles”is a tiny eatery of less than six pyeong that is always packed with customers. Everyone comes for the “signature shaomian noodles,” which feature rich ingredients and chewy egg noodles. During meal times, it’s nearly impossible to find a seat. The slightly sour flavor of the shaomian noodles makes them especially appetizing in the summer.
The “signature shaomian noodles” come with a generous mix of toppings, including ground meat, tomatoes, and eggs, making them look like a hearty stewed noodle dish. The noodles are egg noodles, and you can customize them with black vinegar or pickled mustard greens according to your preference. Since the flavor is on the tangy side, you can also order a bowl of the Mixed Three-Meatball Soup to balance the taste. The firm and bouncy fish balls and meatballs let you enjoy the natural flavors and freshness of the ingredients, though the filling in the meatballs could be more generous.

The shop’s specialties are the shaomian noodles and the Mixed Three-Meatball Soup. Regular customer Wang, a student, jokes that even if he’s already eaten, he and his friends will still share a bowl of the signature shaomian noodles when they pass by. The chewy egg noodles, soaked in rich sauce and topped with a variety of ingredients like tomatoes and ground meat, and finished with a splash of vinegar — this unique flavor can only be found at “Dinghao Shaomian Noodles.”
Original jewelry business owner Mr. Huang shares that he learned how to make shaomian noodles from a Yunnanese employee during a chance encounter, then incorporated authentic Taiwanese ingredients. Since Yunnan cuisine tends to be tangy, the noodles are especially refreshing in the summer. Mr. Huang also says the “signature shaomian noodles” include ingredients like onions, minced meat, mushrooms, tomatoes, and scrambled eggs, served with egg noodles. The ingredient list may sound simple, but Mr. Huang emphasizes that with care and dedication, the best flavors can be achieved.
