The world’s first one-star Michelin hawker “Liao Fan Hong Kong Soy Sauce Chicken Rice & Noodles,” which opened its first global overseas branch and also its first store in Taiwan on April 21, has consistently required hours-long waits just to get a meal. Now, the restaurant is offering phone reservations for its signature dish “Soy Sauce Chicken (Whole Chicken).” Reservations open on May 16, with pickup available two days after booking. Currently, only the whole chicken option is available, priced at NT$680.
Liao Fan Hong Kong Soy Sauce Chicken Rice & Noodles’ first Taiwan outlet offers four signature dishes: soy sauce chicken, char siu, roasted pork, and spare ribs, each paired with rice, pulled noodles, plain noodles, and three different side dishes. The soy sauce chicken is the signature dish of Liao Fan Hong Kong Soy Sauce Chicken Rice & Noodles. In Taiwan, locally raised chicken is used, simmered for a long time in a specially blended braising liquid flown in from Singapore, made with traditional Chinese medicinal herbs such as angelica and star anise. This process allows the chicken to fully absorb the flavors, with the skin taking on a glossy, caramelized hue.
