Stinky tofu has long been a unique part of Taiwan’s food culture—pungent when raw but deliciously fragrant when eaten. Located on Yizhong Street in Taichung, “21 Stinky Tofu” doesn’t have a big flashy sign or a well-known name. The owner simply sets up a frying station and a few tables, opening only at 5 p.m. every day, yet still draws huge crowds eager for a taste. Often, the stinky tofu sells out before 8 p.m.
The golden, crispy outer layer coats square-shaped pieces of stinky tofu stacked like bricks. A closer sniff reveals a faint odor—not the overwhelming stench typical of most stinky tofu, making it suitable even for those who usually dislike the smell. Some customers prefer to split the tofu open, stuff it with pickled vegetables, then drizzle on sauce and sprinkle with minced garlic. Taking a bite, the hot, freshly fried tofu sizzles: crunchy on the outside yet tender and juicy within, avoiding the hollow texture often caused by over-frying. Paired with sweet and tangy pickled veggies, the dish offers a delightful layered flavor.
The owner said they’re a fan of stinky tofu but, having tried many versions, felt most lacked the true taste. So they started selling their own. Though “21 Stinky Tofu” only opens at 5 p.m., it often sells out before 8 p.m. Those looking to satisfy their cravings should arrive early.
