As soon as you step into this pizza shop in Banqiao District, New Taipei City, you can feel the leisurely pace of savoring time. It's a great place for a gathering or chat with friends. The shop serves Italian-style pizzas with thin, crispy crusts that are delicious. Even though it's tucked away in an alley, many customers still flock here for the aroma.

The name "Slow Down Pizza" makes it easy to see the atmosphere that owner Cheng Rongqing wanted to create — and it's also the reason he chose pizza as the focus of his business from the start. He said, "It's simply because I enjoy sharing experiences, and I believe life should be savored slowly. I hope to give customers a feeling of being at home." Located in an alley in Banqiao District, it might be hard for non-locals to discover this delicious Italian pizza shop. But after more than a year in business, the pizzas have built up a solid reputation through word of mouth. As for choosing Italian over American-style pizza, Cheng explained that American pizzas are a fusion of various cuisines with more complex flavors, while Italian pizzas originally often only had cheese and lard. He believes Italian pizzas better showcase the tradition of pizza, with their thin crusts and simple toppings that let the flavor of the crust shine.

The pizzas at Slow Down Pizza are larger than those found elsewhere, and the crust is even thinner and crispier. Don't assume making pizza is easy, Cheng said. The biggest challenge is that daily humidity and temperature affect how the dough is stretched. Aside from using expensive detection instruments, it all comes down to experience and feel. As for ingredients, Cheng goes to the market every day to handpick them himself.

Owner Cheng Rongqing’s top recommendation — and the customers’ favorite — is the "Finding Nemo," which must use fresh shrimp, crab meat, and squid. During baking, a quick two-minute high-temperature method locks in the natural sweetness, and thanks to the thin crust, all the seafood seems to "dance" on your tongue. The crispy outer crust is also amazing. From the seafood toppings to the base, and all the way to the super-crispy outer edge, the "Finding Nemo" pizza truly "brings together a variety of textures."

Another standout is the grilled flatbread series. The "Garden Greens" features up to seven types of vegetables and fruits, including onion, green bell pepper, tomato, king oyster mushroom, shiitake, black olives, and pineapple. Cheng has developed a unique way to eat it: "I suggest customers stuff the vegetables inside the flatbread and take a big bite. You get the original flavor of the flatbread, and since it doesn’t have tomato sauce like pizza, you really taste the handmade flatbread aroma."
