“Capital One” at Grand Hyatt Taipei Serves Limited-Time Authentic Peking Duck

Grand Hyatt Taipei noted that Head Chef Tong Xin is a native Beijinger with over 20 years of culinary experience. He specializes in Beijing cuisine, Sichuan cuisine, and Cantonese cuisine. This is his first visit to Taiwan, and besides bringing the must-try Peking Duck, he has also selected several popular signature dishes to showcase the irresistible essence of Beijing cuisine to Taiwanese food lovers. “Capital One” is a Chinese restaurant located in the east lobby of Beijing’s Grand Hyatt Hotel, featuring four open kitchens. Its Peking Duck is hailed as one of the three most iconic ducks in Beijing. Grand Hyatt Taipei stated that celebrities such as Maggie Cheung, Andy Lau, Jackie Chan, Karen Mok, and Rosamund Kwan, as well as business magnate Warren Buffett and former U.S. President George H.W. Bush, have all dined there.

Among the “Capital One” kitchen team, Chef Fan Jiabiao, renowned for his knife skills, said that the most popular way for Beijing’s elite to enjoy the dish is by dipping the duck skin in white sugar, which is said to have beautifying effects. This Peking Duck, priced at NT$2,500 per serving, requires a two-day advance reservation and is available only in limited quantities daily. Grand Hyatt Taipei specially selects ducks from farmers in Yuanshan Township, Yilan, choosing birds weighing between 2.5 and 3 kilograms. These ducks are known for their tender meat, fine pores, and perfectly balanced fat content, with fresh, warm-processed ducks delivered to the hotel. Each step—from preparing the duck, stuffing it, shaping it, setting it, glazing it with sugar, roasting it, to slicing it—is meticulously handled with unique techniques.

Chef Fan Jiabiao recommends enjoying the Peking Duck in three different ways: duck skin, duck breast, and duck leg with skin-on meat. First plate: sliced duck skin—crispy, glistening, and nearly translucent—served the traditional Beijing way with white sugar. The crystalline sugar cuts through the richness, while the amber-colored skin offers a sweet, crispy, melt-in-your-mouth texture that releases the aroma of duck fat. Second plate: sliced duck breast—the meat is juicy and tender, wrapped in freshly steamed lotus leaf pancakes along with scallions, cucumber strips, and sweet bean sauce for a flavor that lingers on the palate. Third plate: duck leg with skin-on meat—wrapped in a pancake with cucumber, sweet bean sauce, and mashed garlic, delivering a rich, aromatic blend of fatty duck meat and crispy skin in a deliciously fragrant roll.

Other chef-recommended signature dishes include cold appetizers such as “Cold Eggplant in Aged Vinegar,” “Spicy Garlic Pork,” and “Traditional Spicy Chicken.” Other highlights include “Capital One Premium Soup,” “Garlic Butter Prawns,” “Stir-Fried Cabbage,” “Capital One Braised Cod,” “Naxi Spicy Chicken,” and “Beijing-Style Noodles with Thick Sauce”—each bursting with flavor.
