Shredded green papaya goes beyond salad – Chef Ah Ming showcases “royal Thai cuisine” with creativity

But Sukhothai’s executive chef Li Mingren (Chef Ah Ming) mixes turmeric powder and coconut milk into a batter with the papaya shreds, then coats them in crispy flour and deep-fries them. Three fried white shrimp are placed on top. The deep-fried papaya shreds retain their moisture, offering a texture that’s crispy on the outside and juicy inside, paired with a papaya sauce made from yardlong beans, peanuts, dried shrimp, and a special blend of tamarind, fish sauce, and coconut sugar.

Royal Thai cuisine is luxurious and refined, aiming to showcase the flavors of the kingdom with added creative touches. Compared to affordable Thai food, it carries a more upscale charm. A well-known hotel has replicated its in-house restaurant, famous for royal Thai cuisine, at an off-site location in Xinyi District, launching a women-focused "she-economy" concept with more accessible pricing.

Shredded green papaya is usually served as a salad in home-style Thai cooking, but Sukhothai’s executive chef Li Mingren (Chef Ah Ming) mixes turmeric powder and coconut milk into a batter with the papaya shreds, coats them in crispy flour, and deep-fries them. Three fried white shrimp are placed on top. The deep-fried papaya shreds lock in moisture, resulting in a crispy exterior and juicy interior. Paired with a papaya sauce made from yardlong beans, peanuts, dried shrimp, and a special blend of tamarind, fish sauce, and coconut sugar, the dish moves beyond the traditional “salad” presentation, showcasing a different cooking technique.

“Southeast Asian herb leaf rolls”Spinach leaves are used to wrap a filling of shallots, dried shrimp, roasted peanuts, toasted coconut powder, galangal, as well as diced apples and lemons, then placed on a hollowed-out cucumber base. Each bite-sized roll offers a rich filling with layered textures, delivering a tangy, sweet, and spicy flavor that’s refreshing and appetizing.

Signature Dishes“Northern-style Stir-Fried Betel Nut Flower with Mixed Mushrooms”Chef Ah Ming first blanches the betel nut flower, then combines it with four types of mushrooms such as button mushrooms and enoki mushrooms, along with lemon slices, shallots, fried rice, chili powder, fish sauce, and lemon juice. After mixing, he tops it with fried betel nut flowers. The healthy, mildly spicy, and slightly sweet flavor is a favorite among female diners.

“Thai Meat Skewers with Tamarind Sauce”Skinless pork belly is marinated with a variety of seasonings including coriander seeds, coriander roots, coconut sugar, and fish sauce, then grilled over charcoal to fully infuse the aroma into the meat. It’s served with tamarind sauce. With each bite, the juicy meat bursts with flavor. The “Thai Fish Sauce-Crusted Fried Fish Cheeks” are marinated with white pepper, fish sauce, minced garlic, rice wine, salt, and crispy garlic before frying. The fish is tender and flavorful, with a crispy, aromatic crust. Paired with the accompanying sour-spicy green dipping sauce, it offers yet another delicious twist.
