“Single Origin espresso & roast” is a brand-new concept of a self-roasted coffee shop, planned and operated by Huang Jijun, who previously worked at 5 Senses Café. Although the shop has a different name, it is one of the many branches under the same group, and those in the coffee industry simply refer to it as S.O.

The espresso we usually drink is typically extracted from a blend of beans, and when combined with steamed milk, becomes drinks like lattes or cappuccinos. “Single Origin Espresso,” on the other hand, is based on the concept of single-origin beans — using a single-origin coffee to make espresso, which can be drunk straight or with milk, allowing you to directly taste the unique flavors from different regions.

Huang Jijun, who has been in the coffee business for about six years and runs this single-origin self-roasted coffee shop, said: “The idea came from a cup of Natural Yirgacheffe S.O. brewed by Master Zhuang Hongzhang in 2011 — the flavor was something I’d never experienced before!”

Therefore, he believes that in today’s coffee market where green bean quality is continually improving, brewing and roasting techniques are merely tools to bring out the inherent characteristics of the beans. That year, when Huang Jijun participated in the TBC Taiwan Barista Championship, he used a Panamanian Elida Estate S.O. to make espresso and cappuccino.

Currently, the equipment used in the Single Origin coffee shop includes a Simonelli T3 double-spout espresso machine, a Mazzer Robur conical burr grinder, a one-kilo roaster, and a Chemex coffee maker. The coffee beans offered are mainly lightly roasted — roasted to around the end of the first crack, preserving the beans’ natural acidity and sweetness, with minimal bitterness.

The selection includes beans from Ethiopia, Bolivia, Costa Rica, Kenya, Rwanda, Guatemala, and Colombia, featuring various origins and processing methods, and they are changed on a non-regular basis.

So when you come here, please first choose a type of coffee bean, then decide how you want it brewed. If you opt for espresso machine extraction, it gets even more interesting !

They use double the amount of coffee grounds to extract two shots of espresso — one to drink straight as S.O. espresso, and the other can be made into an Americano, latte, or cappuccino.

Although not everyone has tried the flavor of espresso, based on several months of operation, customers have been quite receptive to this new experience, which is something Huang Jijun is very happy about. Come and experience the wonderful flavors brought by Single Origin !
