The egg tarts at Tung Tao Hong Kong Café are not Portuguese-style egg tarts but have their own unique Hong Kong flavor, with the most distinctive feature being the 192-layer puff pastry — flaky, crisp, fragrant, and with clearly defined layers. Yang Shaoye, the second-generation successor of Tung Tao Café, explained that the tart pastry dough is refrigerated overnight after the water dough and oil dough are prepared. The next day, the dough is laminated to create 192 layers. To ensure a clear distinction between the dough and fat layers, it is refrigerated again overnight before being placed in tart molds the following day. It is then refrigerated for another night. The entire puff pastry-making process takes three days. Due to the labor-intensive process, it is also difficult to replicate.

▲ The Hong Kong-style roasted meats also receive positive reviews.

The coffee and milk tea served at Tung Tao are made using a skilled tea-whisking technique. The purpose of whisking is to allow the coffee (or tea) to come into contact with air, making it smoother while enhancing its aroma. However, Tung Tao still keeps its exclusive coffee formula a closely guarded secret to this day. Yang Shaoye said that both the coffee and tea are imported from Hong Kong.

However, besides the signature 192-layer puff pastry egg tarts and Hong Kong-style pineapple buns, many people visit during lunchtime for Hong Kong-style roasted meats, steamed dim sum, clay pot rice, and stir-fried dishes.
