Japanese tonkatsu has been all the rage lately. What exactly is tonkatsu? It looks very similar to tonkatsu (fried pork cutlet), and the preparation process is quite alike, but the biggest difference lies in the oil temperature and cooking time used. By employing a high-temperature, quick-fry method, it achieves a crispy outside and tender inside texture. Starting June 15, Taiwanese customers can also enjoy tonkatsu at Yoshieih, priced at NT$280.
Yoshieih’s tonkatsu was developed by Head Chef Mr. Ino, who spent nearly a month, used around 300 pieces of beef cutlets, tested dozens of coatings, and experimented with various oil temperatures and cooking times to perfect this dish, which has received unanimous praise from the cooking team. In addition to the beef cutlet itself, Yoshieih also serves it with mashed yam and a hot spring egg.
