How can you make bread without flour? “Baking Code” behind the Municipal Government MRT Station has the answer,the first in Taiwan to create flourless bread using only cornstarch, soybean flour, and glutinous rice flour,offering fresh new textures and flavors while keeping it healthy and guilt-free.

Speaking about why he wanted to open such a bakery, the former trade industry professionalowner Chen Chengtaibelieves that eating is a necessity for everyone, but as modern people gradually become more health-conscious, there are still too few nutritious and quality food options. So, besides selling bread,this bakery also aims to promote the long-popular gluten-free diet concept from abroad.

Chen Chengtai said that a gluten-free diet means avoiding gluten-containing foods, such as wheat or its byproducts, mainly because some people are allergic to these. However, bread made from non-grain proteins usually avoids the bloating and indigestion issues common with regular bread, andthe bread itself also has a firmer, chewier texture,with both sweet and savory options. The “Cranberry Cream Bread” is one example—the rich buttery filling paired with the tangy sweetness of dried cranberries is very enticing.

The store also sells whole wheat bread, which contains even more whole wheat flour—up to 60%—yet doesn’t compromise on its soft texture. The inspiration for all products in the store comes from the owner’sIsraeli friend Amir Arie,who also recommends trying the “Sesame Whole Wheat Toast.” The aroma of sesame and wheat blends perfectly in your mouth.

After trying French macarons and Taiwanese pastries, you can also tryArgentinian macarons (Alfajores),which are about 6 cm in diameter—twice the size of regular macarons—and almost half the price. They have a crispy texture without being overly sweet. It’s worth giving them a try when you’re here.
