A 47-year-old flavor passed down in Tainan — braised snacks pair perfectly with beer!

Friends from northern Taiwan especially love heading to Tainan on holidays. Maybe it's the laid-back pace of life, the sun that can turn you golden brown, the warmth of the locals, or definitely the delicious street food.

The area around Guohua Street and Bao’an Road is a hub for food, but if you take a turn onto You’ai Street, besides the famous You’ai Salt and Pepper Chicken, there’s also ‘Heritage Braised Snacks’ with 47 years of history. That evening, I was in the mood for a little drink, and drinks always go best with some sides. I wasn’t craving fried or grilled food that night, so I followed my nose and instinct to ‘Heritage Braised Snacks’ — my perfect midnight bite.

‘Heritage Braised Snacks’ is located on You’ai Street, between You’ai Salt and Pepper Chicken and a 7-11.

Under its simple and neat signboard, many regulars were already lining up.

Unlike typical braised snack shops, Heritage Braised Snacks categorizes all ingredients into meat, vegetables, and noodles using a custom-made large nine-grid display, making it easy for customers to choose and see everything at a glance. I ordered pig’s intestine sausage, cauliflower, baby corn, dried tofu, tofu skin, loofah, pork intestine, and a pack of instant noodles. (A bit heavy, maybe, but I could definitely finish it all. Heh.)

Watching the handsome boss Xiao Long put my chosen ingredients into that fragrant, secret-recipe braising pot, my mouth was already watering.

His skilled and efficient movements are also a visual treat for customers.

As he started plating, we got ready to dig in.

Sprinkled with chopped scallions.

Drizzled with sauce. Oh, and I specifically asked Boss Xiao Long for his secret spicy sauce — I went a bit overboard with the amount because it’s the best spicy dip I’ve ever tried for braised snacks.

Perfect execution.
