Recently, some food businesses have introduced molecular ice cream made with "liquid nitrogen," along with natural fruits and fresh cream, offering the public a unique "molecular" texture to enjoy during the summer.

Unlike traditional ice cream, which is either scooped from a tub after production or extruded by a machine, the ice cream at Bakery 49, a restaurant under Renaissance Catering, is made to order. After a customer places an order, the chef pours the ingredients into a machine and adds liquid nitrogen at minus 195 degrees. The ingredients are rapidly frozen into ice cream within seconds under the low temperature, and then served with toppings.

During the preparation process, as liquid nitrogen continuously evaporates upon contact with air, the ice cream machine is enveloped in dense fog, adding an air of mystery to the cooking process. Once the ice cream is served, staff advise: "Molecular ice cream melts very quickly, so we recommend eating it as soon as possible."

It is understood that the speed at which water freezes determines the size of the ice crystals. The faster the freezing, the smaller the crystals, resulting in a finer texture and quicker melting. Molecular ice cream uses simple ingredients and is made using the low-temperature properties of liquid nitrogen, giving it a smoother texture than traditional frozen desserts and a faster melting rate.Each serving of ice cream remains intact for only 10 to 12 minutes from the time it is made until it melts. Therefore, to enjoy the most delicious molecular ice cream, be sure to seize the golden 12-minute window.

Taking a bite of molecular ice cream reveals a completely different experience from traditional ice cream. Its texture is delicate, almost between powder and liquid, melting entirely in your mouth within a second or two, leaving only the sensation of nutty granules and sweetness, making it feel even more refreshing.

Compared to the lingering aftertaste of traditional ice cream, molecular ice cream has an extremely short presence on the tongue, so even sampling multiple flavors at once won’t clash, offering a uniquely novel sensation.

"More importantly, we use fresh fruits and cream, allowing you to taste the natural sweetness in the ice cream," Chef Ginger proudly explains.

According to Ginger, the store currently offers 10 different flavors, with Brandy-Marinated Cherry and Caramel Sea Salt being the most classic. For those who love fruit, the mango and watermelon flavors are also worth trying.

Ginger also noted that the liquid nitrogen alone costs about 50 New Taiwan Dollars per serving of molecular ice cream, far more expensive than traditional ice cream. Since it melts quickly, it’s a pity to waste it, so the store recommends enjoying it on-site within the golden 12 minutes to fully experience its charm.

Only by using fresh ingredients can the natural, pure sweetness of the dessert truly shine.
