Ampoule Chou’s strawberry tarts this year are truly special—the strawberries used are all the Akihime variety from Ise, Mie Prefecture, Japan, cultivated in partnership with “Daimu Farm” in the Ise region. The “Ise Strawberries” grown in greenhouses each weigh over 20 grams. The farm harvests the strawberries at peak ripeness within a short window, then quickly freezes and ships them to Taiwan to preserve their full freshness. The Ise strawberries used this time are of the Akihime variety, known for their delicate flesh, low acidity, high sweetness, and rich aroma.

The Strawberry Lychee Hokkaido Soft Serve Sundae lets Taiwanese friends experience the Japanese winter passion for strawberry sundaes. It features a slightly sweet, crispy chocolate crumb base, topped with generous scoops of Hokkaido fresh cream soft serve, drizzled with a fruit compote made from Ise strawberries, and finished with half a Strawberry Lychee Cheese Tart for added richness.

Based on a plain cheese tart, it also uses carefully selected French chocolate blended with 99% dark chocolate to create a richly flavored chocolate cheese filling.
