Fried chicken is all the rage — Tiancheng Hotel’s Burger Lab also launches Southeast Asian-style fried chicken

Fried chicken is currently all the rage, and Taipei’s Tiancheng Hotel Burger Lab has jumped on the trend by launching “Southeast Asian Finger-Lickin’ Fried Chicken” and “Finger-Lickin’ Fried Chicken Leg Burger.” Available starting December 7, the single item is priced at NT$120, while the combo meal is offered at a promotional price of NT$199. In addition, Burger Ray, another specialty burger shop, has also introduced three new burger items for the fall and winter season: Wagyu Burger, Grilled Beef Burger, and Premium Caviar Salmon Burger.

The Southeast Asian Finger-Lickin’ Fried Chicken uses firm chicken thigh meat from free-range chickens. After cleaning, the thighs are marinated in over 12 hours using a specially prepared spice salt blended with rice wine, family-secret spices, curry powder, and a bit of water to create a golden-orange brine that slowly infuses the flavor into the chicken. Before deep-frying, the chicken is coated with two layers of batter — first dipped in a wet batter, then gently dusted with a second layer of dry flour. The oil is heated to 170 degrees Celsius, and the chicken is fried for 15 minutes until crispy.

The Finger-Lickin’ Fried Chicken Leg Burger features boneless chicken thigh meat marinated and then fried. Using a special spice salt and family-secret seasonings blended with rice wine, the chicken is marinated until flavorful. It is then coated in a batter made from flour, rice flour, and cornstarch before being deep-fried for 15 minutes to achieve a crispy and juicy texture. Customers can choose between Spicy Lips Sauce, inspired by spicy wontons for a progressively fiery kick, or Classic Mustard Mayo, which combines American and French mustard.

Other classic flavors available at the Burger Lab include the Classic Beef Cheeseburger, American Classic B.B.Q. Pork Burger, Thai Green Curry Beef Burger, Golden Tuna Tartare Burger, Croquette Cheeseburger, Thai Tom Yum Goong Shrimp Burger (limited time), Italian Caesar Chicken Burger, Classic Double Beef Cheeseburger, and Michelin Secret 9+ Wagyu Cheeseburger.

Additionally, specialty burger shop Burger Ray has also launched three new burger offerings for the fall and winter season: the weekend-exclusive “Wagyu Burger,” an upgrade of their signature burger featuring premium Wagyu beef; the “Grilled Beef Burger,” made with tender, juicy snowflake beef; and the “Premium Caviar Salmon Burger,” a Taiwan-first creation that includes a whole box of high-grade caviar — known as the “black diamond of the sea” — using top-tier ingredients.
