Hainanese chicken rice has always been a staple dish in Singapore and Malaysia, but did you know there’s also a Thai version? Chef Ah Ming has brought his authentic hometown flavor exclusively to Xiangmao Kitchen’s Fuxing branch. From now until July 31, only 50 portions will be available daily, giving food lovers a chance to enjoy a unique twist on this classic dish.
The chicken oil and signature dipping sauces are all prepared by Chef Ah Ming. He uses fresh, daily-delivered free-range chicken to render the fat, which is then stir-fried with old ginger to produce liquid chicken oil. The oil is further infused with garlic and ginger, and the rice is steamed with chicken broth. The two special dipping sauces include a Thai-style sweet sauce made by simmering black soy sauce from Thailand to achieve a balanced, not-too-sweet flavor, and a Thai-style spicy sauce crafted with Thai fermented soybean paste, fish sauce, cilantro, chili, and other spices. The chicken itself is cooked using an exclusive secret recipe.

The Thai-style Hainanese chicken rice set meal is limited to just 50 portions per day and is only available at Xiangmao Kitchen’s Fuxing branch. The set, priced at NT$360, includes spicy cold vermicelli, stir-fried mixed mushrooms, green papaya pork rib soup, and lemongrass honey tea.
