Located in Jian Township, Hualien, Aqua Cafe 《Aqua Cafe》 takes pride in offering their pancakes in 3 unique ways. The preparation process is meticulously crafted, and their signature "Aqua Special Iced Lemon Coffee" is also rich and aromatic. Aqua Cafe originally opened by the shore of Liyu Lake but later expanded to Jian Township. The prices here are very reasonable, ranging from NT$60 to NT$250. The cafe is known for its unique pancake-making technique, the only one of its kind in Taiwan. The pancakes have a crispy exterior and a soft interior. The classic original flavor pancake is only NT$100, while the honey cream pancake is NT$120—both are quite affordable.

Many visitors come to Aqua Cafe specifically for their "Pancake Trio." The blackboard at the entrance even boldly states: "Taiwan’s best-tasting original flavor pancake, crispy outside and soft inside, with an excellent texture, no baking powder added, guaranteed to be delicious (and drinkable). The "Pancake Trio," as the name suggests, offers three ways to enjoy the pancakes. The first way is to eat the classic original flavor plain, best enjoyed while hot, with its crispy exterior and soft interior. The second way is to pair it with the cafe’s specially made fresh cream, which contains no preservatives, giving it an ice cream-like texture that’s indulgent yet not heavy. The third way is to have it with honey—the sweet yet not cloying honey adds a refreshing touch to the pancakes.

Aside from the pancakes, the cafe’s "Aqua Special Iced Lemon Coffee" is also highly aromatic, with a sweet and tangy taste that’s one of the shop’s signature drinks. The layered color is achieved by adding butterfly pea flower and lemon juice, giving it a dreamy and visually pleasing appearance.
