NoodleMix Li Mian Zuo is a chain brand, currently with only one branch in Kaohsiung located on Xinhai Road, which has been in operation for several months. I passed by for a meal nearby last time and completely missed it. The shop specializes in refined Chinese noodle dishes, breaking away from the traditional noodle snack shop vibe and attracting young crowds and small families with its trendy, fashionable style.

The dining space is bright and spacious, and there’s air conditioning too, so you can enjoy your meal in comfort.

The ordering is self-service—just go straight to the counter.

The menu focuses on Chinese-style noodles, including cold noodles, dry noodles, and soup noodles, with a variety of flavors, even vegetarian options.

The Black Braised series lets you pick your own items. The photo shows handmade fish cakes, spiced tofu, braised eggs, kelp, enoki mushrooms, seasonal vegetables, and pork cheek (chrysanthemum pork).

For those who love bold flavors, the shop offers two sauces: the one on the left is garlic sauce, and the one on the right is chili sauce. Both are great—the garlic sauce helps deepen the flavor of the braised items.

Side Dish – Spicy Cucumber with Eggs (Pi La Hong) – 63 NTD
A traditional cold dish from the Northeast, also called Tiger Salad. It includes cucumber, century egg, tofu skin, peanuts, and spices, seasoned with the shop’s special spicy red oil. The century egg doesn’t have its usual strong smell—in fact, it helps mellow the spice.

Signature Dry Noodles – Spicy Chicken Wide Noodles – 132 NTD

I love the flavor of the Spicy Chicken Wide Noodles. They’re actually not very spicy at all. The wide noodles are paired with egg flavor, cabbage, and bean sprouts, and the aroma is brought out using a stir-frying technique.

Signature Dry Noodles – Beijing Black Sauce Noodles – 70 NTD

Black sauce is made only in Beijing and Korea worldwide, and this shop follows the Beijing method. The black color comes from bamboo charcoal. The sauce isn’t as salty as the Taiwanese version, but it will turn your mouth black—whether you’re okay with that is up to you.

Cold Noodles – Shandong Tiger Wu Su La (Spicy) – 78 NTD (Small)

Similar to the Pi La Hong side dish, but with noodles added. These noodles come from a famous noodle manufacturer in Tainan—they’re very springy. This spicy, flavorful cold noodle dish is a big hit with my husband.

6T – Taiwanese Pizza-Style Mi Xian Pancake – 90 NTD

The mi xian used here is hand-pulled by master noodle artisan Pan Shunlong. It takes twelve steps to make, showing just how labor-intensive it is. The noodles include sesame oil and egg mixture—I’m not used to the sesame oil flavor, and personally prefer mi xian mixed with garlic-infused oil and scallions.

Organic Soy Milk Fried Egg Clam Soup Noodles – 107 NTD
The broth is entirely made from organic soy milk. To prevent it from being too bland, a fried egg is added for extra aroma and richness.

The shop’s noodles are all of good quality—whether the cold or dry noodles we tried earlier, they’re all quite chewy.

All the richness in the bowl comes from the fried egg. It’s recommended to soak the fried egg a bit to soften it before eating—it tastes better that way.

Starting from Tainan, the shop now has multiple branches across the province. Their mission is to promote the spirit of Chinese noodle cuisine. They’ve gone to great lengths to bring in master noodle makers and well-known noodle factories from various regions to create what they call “noodle soul,” aiming to compete with Japanese ramen and Italian pasta. This spirit is truly admirable. Beyond traditional business models, Chinese noodle dishes can also embrace a fashionable, youthful style, injecting new energy into classic foods. This unique noodle spot comes highly recommended.
