Originating from the aftermath of the devastating August 7 Flood in 1959, “A-Hai’s Duck Meat Noodles” began when the flood washed away local residents’ food supplies, forcing many to turn to duck as sustenance. A-Hai’s father, while collecting stray ducks, had the idea to cook them into a soup with angelica, turning it into a noodle dish sold for one dollar per bowl for two nights. The unique fragrance from the angelica and duck bone broth quickly made it a well-known delicacy in Tuku, Yunlin.

Though the noodles use angelica in the broth, they aren’t as dark or heavy as one might expect. The duck bone stock has a golden hue, paired with slightly chewy red noodles, diced duck meat, and a sprinkle of shredded ginger. This seemingly simple bowl of noodles boasts a rich yet refreshing broth. The specially prepared duck strips offer a savory saltiness, complemented by noodles that hold their texture even after soaking in the broth—making for a truly unique flavor.

A-Hai shares that only 90-day-old free-range ducks are used for the meat—ensuring it’s tender, juicy, and full of flavor. While the shop is best known for its duck meat noodles, its side dishes are the perfect finishing touch. Signature braised items such as duck wings, duck gizzards, and rice blood tofu are displayed in large stainless steel pots near the entrance. Their tender, glazed skins shine in light brown and exude mouthwatering aromas. If you’re still hungry after finishing your noodles, picking up some braised treats to go is a great way to extend the delicious experience.
