The first ramen shop in Japan to earn a Michelin one-star rating, Japanese Soba Noodles 茑, collaborated with Wynn Palace Macau’s Huayue Ramen back in August (2016) to launch a noodle variety designed by Chef Daisuke Yoshitake. However, it seems that Macau locals did not take to the light, chicken-based broth, so Huayue Ramen has decided to start serving tonkotsu ramen from today onward. Since this broth was not designed by Chef Daisuke Yoshitake, he announced the end of the collaboration on his blog.
Huayue Ramen at Wynn Palace, created by Chef Daisuke Yoshitake, was also the first overseas branch of Japanese Soba Noodles 茑. It originally focused on offering soy sauce ramen, priced from 108 Macanese patacas (over 400 New Taiwan dollars) per bowl. Currently, Japanese Soba Noodles 茑 has branches in Taiwan, Singapore, and Hong Kong.
