French Artisanal Pastry Shop "Late at Night" Opens Offline on August 28 – No Reservation Needed

No need to wait until midnight or make advance reservations to enjoy the viral online French desserts “Late at Night.” The physical store of “Late at Night French Artisanal Pastries” will officially open on August 28, regularly offering a selection of tarts, madeleines, financiers, dacquoise, and meringue cookies. The shop will be open from 4:00 PM to midnight.

In the past, to enjoy “Late at Night” (also known as 深法) pastries, customers had to place an online reservation and pick them up outside the studio late at night. Many wanted to try them but couldn’t due to timing or sold-out issues. After being invited twice to pop-up events in department stores, Chef Rick decided to open a physical store to make the pastries more accessible. Rick mentioned that their Facebook page has 750,000 followers, but perhaps only one-tenth have tried their desserts. By opening the physical store, he hopes the remaining nine-tenths can finally enjoy them.

Although the physical store is now open, business hours begin at 4:00 PM. This is because Chef Rick insists on making everything fresh daily — the earliest batch is ready by 4:00 PM after starting production in the morning. However, compared to other pastry shops, “Late at Night” will serve desserts until midnight, a rare practice. Rick explained that this schedule accommodates both the pastry-making timeline and the needs of office workers who want sweets after work, even if it's close to midnight.

Another unique aspect is that Rick insists on not using standard display cases. Instead, all pastries are kept in refrigerators, even in their boxes, and are taken out only after customers place their orders based on the menu. Additionally, each hour the store is open for 45 minutes, with the remaining 15 minutes dedicated to cleaning and restocking.

Additionally, to celebrate Valentine’s Day and the launch of the physical store, “Late at Night” has introduced two new products based on the raw chocolate tart: the Hazelnut Raw Chocolate Tart and the Honey-Orange Raw Chocolate Tart. Each is priced at NT$450. Pre-orders for these two tarts began on August 18, with deliveries starting on August 21, and are available in limited quantities daily.
