Pancakes are one of many people’s favorite sweet treats, whether topped with maple syrup, honey, or whipped cream, each variation has its own charm. But among the tens of thousands of pancake shops around the world, Bills’ pancakes were named “the best pancakes in the world” by The New York Times, and even Leonardo DiCaprio considers them the best breakfast in the world.

Founded in Australia, Bills became globally famous for its scrambled eggs and pancakes. It now has multiple branches in Japan, offering a variety of dishes such as brunch and pasta. Nine-Five Evil Wife visited the Tokyo Daiba branch. However, since breakfast seating is only available on a walk-in basis—with an average wait time of 40–60 minutes or more—she, unable to wake up early for the queue, made a bold decision: have dinner instead.

In fact, Bills’ pancakes are available all day, so visiting in the evening allows you to enjoy them not just on their own but also as part of a combo meal, making them a post-meal dessert. So if you don’t want to wake up early for the line, you can try going in the afternoon. That said, without sunlight, the pancakes feel a bit less lively, and the evening lighting is more romantic, which isn’t great for photos.

Although commonly referred to as pancakes in Chinese, Bills’ English menu lists them as ricotta hotcakes—not the familiar pan cake or waffle. As the pancakes arrive, their uniqueness quickly becomes apparent. First, Bills’ pancakes are about 1–1.5 cm thick, with a slightly doughy, seared exterior reminiscent of a flattened biscuit (not the muscular woman from Hunter x Hunter). They’re topped with grilled banana slices and served with half a fresh banana on the side.

According to the staff, the best way to eat the pancakes is to slice through the stacked layers in one cut, then divide them into smaller sections and eat them warm all at once. This brings out the richest textures and allows you to savor the taste of the honeycomb cream between the layers.

Bills’ pancakes are slightly crispy, soft and moist when chewed, without too much airiness—they melt easily on the tongue, with a texture somewhat like egg cake paired with traditional rice cake. Upon closer chewing, you can detect a faint milky aroma, while the honeycomb-infused cream tastes refreshing and sweet, complemented by bananas that add textural variation and the natural fragrance of fruit.

After trying them, it’s clear that Bills’ pancakes truly have something special, which explains their huge popularity.However, each pancake set costs 1,350 yen (about NT$379). Compared to Negishi’s beef tongue set meal at around 1,500 yen, Nine-Five Evil Wife feels the price isn’t particularly wallet-friendly.But for those who absolutely love desserts, it’s still worth a try if you get the chance.
