A Color of the Ocean: American Gastro Pub Launches Seasonal “Blue Burgers”

Black burgers are common, but blue ones are rare. Black Bear Loves to Dance, an American gastro pub, recently launched three limited-edition blue burgers for summer called the “Ocean Nana Burgers.” These include the “Love Magic Princess Burger” in a red wine, cranberry, and chocolate flavor, the “Tough Girl Burger” with Kinmen Kaoliang liquor cheese beef, and the “Pearl Mermaid Burger” featuring mentaiko tartare and golden fish fillet. All the beef used is U.S. PRIME grade, priced between NT$288 and NT$328.

Li Qiming, the operating director of Black Bear Loves to Dance, said the restaurant introduces seasonal limited-edition burgers every quarter. Since summer is associated with the ocean, they decided to turn the burger buns ocean blue. Li explained that the buns are made from a blend of Japanese flour and Taiwanese bread dough, resulting in a soft and elastic texture. The ocean blue color comes from food-grade edible dye.

Li noted that burgers have always been one of the pub’s main menu items. In addition to classic flavors, there are also Taiwan-inspired creations like the “Taiwan Soul Burger.” This season’s ocean-themed burgers are equally creative. The “Love Magic Princess Burger” combines red wine, cranberries, and chocolate — a surprisingly well-matched sweet and savory combo. The “Tough Girl Burger” features a creative twist on Kinmen Kaoliang sausage by replacing pork with beef. As for the “Pearl Mermaid Burger,” besides the Western-style mentaiko tartare and golden fish fillet, it’s topped with mentaiko and salmon roe. Li said he hopes diners will be immersed in a rich ocean flavor, aligning with the theme of a “blue ocean legend.”

These three burgers will be available until the end of September. Li mentioned that new limited-edition flavors will be introduced afterward.
