Wang steakhouse unveils new dish: “New York Strip Steak”

With a 22-year history, Wang Steak has continuously developed and launched new main courses since its early classic signature dish, the “Wang Ribeye Steak.” To attract a younger clientele, Wang has introduced a new main dish — the “New York Strip” steak. Zhou Guangyu, deputy general manager of Wang Steak, said that young people today prefer their steaks cooked to a certain doneness, and the New York Strip also has a trendy appeal, making it the new main dish for 2015.

Unlike the fully cooked Wang Ribeye Steak, which is seasoned with special Chinese condiments, Lin Zhengde, head chef at Wang Steak, said the New York Strip is a steak cooked to a certain doneness (recommended medium-rare), and is prepared with just a touch of salt and pepper, allowing diners to enjoy the natural sweetness and chewiness of the beef — a quality that appeals especially to today’s youth. In addition to the original flavor, Wang has also created two sauces tailored for the New York Strip: a white pepper sauce and a pineapple fruit dipping sauce cooked with brandy, offering customers a variety of flavor experiences.

Additionally, Wang has incorporated representative Taiwanese ingredients and unique cultural elements into its menu design, including local culture (sweet potatoes), Hakka culture (kumquat jam), as well as upcoming Lunar New Year themes (bamboo shoots, dried mullet roe, pineapple) reflected in the dishes.

In 2015, Wang Steak’s biggest challenge is to rejuvenate the brand. Zhou Guangyu said that the Wang brand has been around for 22 years, and for many, it might be a place for family gatherings or business meetings. To capture the attention of younger diners, Wang has begun a brand rejuvenation transformation. The first step was renovating the Zhongshan branch, giving it the feel of a lunch bar. Other branches will gradually undergo similar makeovers, and the launch of new main dishes like the New York Strip is also aimed at attracting a younger audience.
