Noodle IROHA, an agent introduced by Yimei Foods and famous for its Toyama black soy sauce ramen, opened its first store in Taiwan in December 2016 in the Zhubei area of Hsinchu County. After half a year, the official finally announced that it will open a store in the north. The location is on Songjiang Road in Taipei City. The opening date has not yet been determined.
Since Yimei attaches great importance to food safety, it insisted on using natural ingredients and no artificial additives when it first started negotiating for an agent. Even alkaline water cannot be added to the noodles. Kurihara Kiyoshi, president of Noodle House IROHA, said this was one of the challenges of setting up a store in Taiwan. Another challenge was to use Yimei's whole-bean pure brewed soy sauce to prepare dark soy sauce.
Since Taiwanese noodle shop IROHA almost all uses local ingredients and raw materials in Taiwan, President Kiyoshi Kurihara does his best to adjust the product to a taste similar to Japan. However, Kiyoshi Kurihara said that it is in line with the habits of local Taiwanese people, so the saltiness and spiciness have been adjusted to make it less salty.
