Speaking of pickled cabbage and pork hot pot, one can’t help but mention Taiwan Power Company’s Lijing Restaurant, which boasts a history of half a century. It’s not only widely renowned but has also been covered by various media outlets. In the 2014 “Top 10 Hot Pot Restaurants” online poll, the Taiwan Power Company Lijing pickled cabbage and pork hot pot even took first place. Although a new branch, “New Lijing Pickled Cabbage and Pork Hot Pot,” has recently opened, it hasn’t dented its popularity.

The New Lijing Pickled Cabbage and Pork Hot Pot is run by the former head chef of Taiwan Power Company Lijing. Located in Neihu District, Taipei City, its environment is more comfortable than that of the original Lijing. Though it also uses the tall chimney-style hot pot, it switches from charcoal to an induction cooker, which seems to take away some of the traditional feel.

The long-established Uncle’s Hometown Flavor: Northeastern Pickled Cabbage and Pork Hot Pot originally comes from Taichung but gained fame in both Taichung and Taipei. Its pickled cabbage is naturally fermented, offering a tangy yet fragrant taste, and the broth has a refreshing flavor with the natural sourness and sweetness of the pickled cabbage. Since no vinegar is added, some may find Uncle’s version not sour enough.

Located on Jilin Road in Taipei City, the pickled cabbage and pork hot pot restaurant “Jin Dao Zi” not only serves authentic “pickled cabbage” as its star ingredient, but its broth is also simmered for almost a full day using both pork and chicken bones. With no vinegar or MSG added, the flavor comes purely from the natural sweet-and-sour taste released by the broth and pickled cabbage. The taste is rich and tangy without being overpowering, and it gets less sour the longer it simmers – the more you drink, the better it tastes.
