In today’s health-conscious society, many people are paying more attention to ingredients and freshness. Huang Yuxiang and Wang Xinhui Mandy, who aren’t professionally trained bakers, were inspired by this idea to create a path of refined single-product offerings. They founded “CelloBakery Handmade Toast Workshop” in Wenshan District, Taipei. The couple also revealed that they got into baking because their daughter was allergic to the artificial flavors and colors used in commercial bread, which led them to want to share their additive-free, handmade creations.

Actually, owner Wang Xinhui Mandy is a renowned cellist who has performed with famous artists such as Jay Chou, Mayday, and Sodagreen. After hearing her daughter say, “Mom, the bread is so yummy,” those hands that once danced across cello strings began working with dough instead.
Mandy laughed and said that some customers have mentioned that listening to the bread-making process feels just like baking at home — using only the best raw materials and ingredients. It’s this homely flavor that has turned many into regulars.Mandy shared,For her, both playing music and baking are forms of art. She applies the same philosophy she holds for music to her dough — no detail in the process or ingredient is overlooked. Just as composing a beautiful melody requires precision in pitch and tone for every note, this belief has become the shop’s slogan: “Notes dancing on the taste buds.”

The decision to focus on refined single-product offerings originally came from the couple’s trip to Japan, where they noticed that Japan had already embraced specialized, high-quality bakery shops. Yet in Taiwan, few stores operated this way — why not use it as a market differentiator?
At the same time, to ensure safe and hygienic ingredients, they go to great lengths to source directly from producers and farmers, ensuring all customers can eat with peace of mind and good health. Huang Yuxiang said that while toast-making may seem simple, the simpler something is, the more care it requires. What started as bread made specially for their daughter has now become a bridge to share and connect with customers — allowing them to enjoy healthy and happy meals.

Currently, all the toast in the store is made by the couple, featuring four main flavors: Spring Wheat No Secrets (NT$90), Bees Can’t Bear to Leave (NT$95), Uji Meets Golden Sweet Potato (NT$110), and Sweet Orange Acquaintance (NT$128). In response to customer requests, they also offer toast dough meal rolls made by reservation. These are meant to be enjoyed fresh on the day of pickup. They recommend not slicing the toast, so customers can enjoy it however they prefer. Additionally, the couple introduces special seasonal flavors throughout the year for more variety.
