Today, I’m going to teach you an advanced version that’s so good you might just want to cook another batch right after finishing your first — "Sun-Dried Tomato Thyme Garlic Spicy Spaghetti." It’s incredibly, incredibly delicious. This recipe also includes how to make sun-dried tomatoes. If you want to cook expert-level pasta, don’t miss this.

Sun-Dried Tomato Thyme Garlic Spicy Spaghetti — 1 serving

Ingredients
Sun-dried tomatoes — 6–8 pieces
Garlic — 4 cloves, sliced
Dried chili — 1, deseeded and chopped
Thyme — 1 small bunch, chopped (dried thyme can be used as a substitute)
Spaghetti — 80g
Olive oil — 1.5 tablespoons
White wine — pour 2 large circles
Pasta cooking water — 2 ladles (about 60ml)
Salt — a pinch
Black pepper — a pinch

*It’s recommended to use fresh thyme. You can grow a small pot on your balcony and simply snip off what you need when required. The aroma will be richer and more natural than dried thyme, taking your spaghetti to the next level of deliciousness.

How to Make Sun-Dried Tomatoes:
First, wash the cherry tomatoes and pat them dry with a paper towel. Place them on a baking tray, drizzle with some olive oil, and evenly sprinkle a thin layer of salt over the top. Bake in the oven at 120°C for 1 hour. Let them cool, then transfer to a clean, airtight jar. It’s best to consume within a week if refrigerated.

Other Uses for Sun-Dried Tomatoes:
They’re great served with French bread, or spread on bread slices, sprinkled with pizza cheese, baked, and then topped with a few basil leaves — all very delicious.

How to Cook the Spaghetti:
Step 1. Prepare a deep pot, add 1000ml of water, and prepare 10g of salt. When the water boils, add the salt and stir well. Place the spaghetti bundle in the center of the pot, then release your hand to let the noodles fan out. Cook for 1–2 minutes less than the package instructions.

Step 2. When the spaghetti is about halfway done, take a separate frying pan, pour in olive oil, and heat over low heat until thoroughly hot. Add the garlic and chili, and slowly sauté until fragrant (the edges of the garlic should be lightly golden — avoid burning).

Step 3. Sprinkle in the thyme, sun-dried tomatoes, ½ teaspoon of salt, drizzle 2 large circles of white wine, and add 2 ladles of pasta cooking water. Bring to a boil over medium-high heat.

Step 4. By now, the spaghetti should be cooked. Just before adding it to the pan, turn the heat under the frying pan to high. Add the spaghetti to the pan and stir-fry until fully coated in the sauce. Before serving, grind some fresh black pepper, add 1 tablespoon of oil from the sun-dried tomato jar, stir briefly, and it’s ready to plate.
