Traditional spring rolls made with crisp, dry wrappers, plus free bonito soup

The third local snack I revisited in Taichung this time was Yang Qinghua. What stood out to me about Yang Qinghua’s spring rolls was their dry, crisp wrappers—I’ve never been a fan of soggy textures, especially when some spring roll shops use juicy fillings, which really isn’t my thing. And yet, this afternoon tea at Yang Qinghua still left me satisfied.

Inside the shop, I ordered one original flavor and one with mustard. I’d never tried the mustard version before—it had an extra layer of mustard spread on top, and through the wrapper, the vibrant green looked incredibly tempting.

Choosing to eat inside also came with free, hot and savory bonito soup to go with the rolls. Ordering a glass of plum juice or lemonade would also be great, and then you can enjoy your spring rolls~

I have to say, the first bite was exactly the texture I love—thin yet chewy, each roll freshly made to order and neatly wrapped.

Thanks to the addition of crushed seaweed, the first bite brings out that fragrant aroma, and it pairs wonderfully if you’ve got the mustard sauce too.

As you reach the middle, you get the familiar flavors—cabbage, crispy egg, preserved radish, bean sprouts, and peanut sugar powder... Though there’s no grilled meat, the minced pork adds a rich aroma, and while there’s no noodles, fried tofu adds texture. Since none of the fillings are overly watery, you can still enjoy the dry, crisp wrapper and the delicious interplay of ingredients right until the last bite.

Mmm~ It’s definitely my kind of spring roll. I feel like eating two in one go wouldn’t be a problem, right?
