I’d heard about a unique local dish in Kinmen called “Egg Dog” or “Egg Fragrance,” but at first, I was completely baffled—what on earth were they selling? Then, during one of my trips to Kinmen, I asked a local friend to guide me, and after some searching, I finally found the legendary spot that serves these treats: Hop Chuen Budget Center. The place is located right next to Qiu Lianggong’s Tomb in Xiao Jing Village. Because it’s tucked away in a narrow alley, I’d probably have gotten hopelessly lost if I’d gone alone. Once I finally tracked down these egg-based delights, I knew I had to try both versions. So come along as I take you on an up-close look at them.

%Originally a humble eatery run by an elderly couple, it has recently undergone renovations. The space is now much smaller than before, when it also sold everyday household goods. These days, it’s purely a food stall.

%The names of the dishes—“Egg Dog” and “Egg Fragrance”—can be a bit confusing at first. Many people might mistake them for “scrambled eggs” due to the way they’re written, which adds a fun twist.

%These snacks are typically made to order, so you might have to wait a bit. But it’s worth it. There are actually four types available: the Egg Dog, Egg Fragrance, Sausage Roll, and Fried Noodles with Sausage. Each combines different ingredients. The first three feature egg wrapped around a hot dog or sausage, topped with lettuce, pickled radish, and a sweet-spicy sauce. They’re all served hot, straight from the fryer, making sizzling sounds that build anticipation. To sample everything, you’ll want to get one of each.
