amba Taipei Zhongshan Indigo Hotel’s “ACHOI Restaurant” officially opened on May 13, collaborating with Lin Ming-Chien, former Executive Chef of Jean-Georges in Shanghai, to present creative contemporary cuisine. The name “ACHOI Restaurant” is specially prefixed with an “A,” representing the commitment to providing the best service, ingredients, and products.

ACHOI Restaurant has invited Lin Ming-Chien, who has worked in Michelin-starred restaurants, to serve as Consulting Chef. Lin stated that he enjoys exploring Taiwan’s night markets and street food culture to discover the essence of local Taiwanese cuisine. For example, the dish “Crispy Fried Chicken with Handmade Italian-Style Cold Noodles” was inspired by his observation of Taiwanese preferences for salt-and-pepper chicken, crispy chicken cutlets, and cold noodles—reinterpreting traditional Taiwanese cold noodles using Italian pasta.

In addition to carefully selected Taiwanese ingredients, ACHOI Restaurant also sources some premium international ingredients, such as French foie gras, Hokkaido sea urchin, California romanesco broccoli, and Spain’s renowned Iberico pork, often called the “Rolls-Royce of pork.” The restaurant features a distinctive Wine Bar and collaborates with selected wineries to offer over 20 unique dessert wines, sparkling wines, reds, and whites.
