The Heavenly Sky Restaurant on the third floor of Beitou Nikko Kagaya has been renovated and will reopen on October 1st to serve Taiwanese guests in a new format.This renovation not only expands the kitchen’s hardware facilities but also includes the acquisition of premium and distinctive artisan tableware from across Japan. It also pioneers the creation of an “Edo-style Yukari Sushi Cart” across Taiwan, where professional chefs offer omakase-style sushi service at the table, complemented by elegantly attired “Shiwa-ka” service staff providing refined Japanese hospitality. With comprehensive upgrades in hardware, cuisine, and service, the restaurant offers guests an authentic Japanese dining experience.

Previously, the third-floor Heavenly Sky Restaurant at Nikko Kagaya mainly served guests staying for the “one-night-two-meal” package or those visiting the hot springs, resulting in relatively limited menu variety. Now, with the kitchen renovation, not only is the space enlarged, but the equipment is also more complete.The upgraded Heavenly Sky will relaunch as a premium kappo cuisine restaurant, allowing guests to not only savor the dishes but also appreciate the beauty of Japanese tableware, delivering a fully immersive traditional Japanese dining experience.

In addition, during the renovation period, Executive Chef Shibasaki Tohru traveled across Japan to source rare and premium artisan tableware such as Arita-yaki and Kutani-yaki. He also enhanced the professional knowledge and service approach of the restaurant staff, who now provide more refined Japanese-style service under the name “Shiwa-ka.” The term “Shiwa-ka” is derived from “Shi” (to serve and entertain), “Wa” (Japanese culture and spirit), and “Ka” (professional artisans)—meaning “highly skilled professionals who deeply understand Japanese etiquette and culture and provide service accordingly.” They will become a one-of-a-kind beautiful highlight at the Heavenly Sky Restaurant.

Taiwan’s Only Yukari Sushi Cart Catching Freshness in a Single Second
Executive Chef Shibasaki Tohru (SHIBASAKI TOHRU) of Nikko Kagaya explained that Japanese kappo cuisine emphasizes the use of fresh, seasonal ingredients prepared on the spot—especially for dishes like nigiri sushi, which race against time. Even a one-second delay in serving can lead to a significant decline in flavor. Alongside the restaurant’s renovation, an exclusive “Edo-style Yukari Sushi Cart” has been created in Taiwan. Guests will no longer just imagine the chef making sushi; instead, the chef will push the specially designed sushi cart, skillfully shaping fresh ingredients into sushi with professional finesse, and the Shiwa-ka will immediately serve it at your table—ensuring that not a second of freshness is lost.
