Beitou Kagaya’s “2016 Noto Gastronomy Festival” is here – from November 17 to 20, they have invited Mr. Ushioda Fujio, the executive chef of Wakura Onsen Kagaya in Noto, which has been ranked No.1 on Japan’s Top 100 Ryokan list for 36 consecutive years, to be a guest chef in Taiwan. Ingredients sourced directly from Ishikawa Prefecture and local Beitu sake will be flown in fresh for a “Noto Feast” luncheon, along with a performance of the traditional Japanese “chef’s knife ceremony,” which dates back to the Heian period, in the evening.

Mr. Ushioda Fujio, the fifth-generation executive chef of Kagaya in Japan, is one of ten Japanese cuisine instructors appointed by the Japan Ryokan Association. With 45 years of experience specializing in Noto traditional cuisine, his exceptional culinary skills have earned recognition from the Japanese Imperial Family and have been a key factor in Kagaya receiving the No.1 ranking in Japan’s Top 100 Ryokan for 36 consecutive years. During his time in Taiwan, he will collaborate with Taiwan’s executive chef Mr. Shibazaki Toru’s team to present the “Noto Feast” luncheon featuring the “Drum Banquet – Three-Tier Bento Box Kaiseki,” as well as locally brewed Beitu sake. Price per person is NT$3,000 + 10%.

Additionally, every evening from 6 PM during the same period, Mr. Ushioda Fujio will perform Taiwan’s first-ever traditional Japanese “chef’s knife ceremony.” This ritual, dating back a thousand years to the Heian period, is performed by master chefs who, with focused minds and impeccable technique, use their chef’s knives and long chopsticks to cut ingredients one stroke at a time with a “one cut, one bow” method, expressing respect and gratitude for life, as well as praying for a bountiful harvest.
