According to statistics from the United Nations Food and Agriculture Organization, Taiwanese people rank 4th in the world for their love of seafood. Seafood sashimi has always been one of the biggest features of Japanese cuisine, with its tender texture and the natural sweetness of the ingredients, making it beloved by food enthusiasts; Tsujihan, a seafood restaurant in Nihonbashi, pioneered the multi-layered seafood rice bowl dining experience in Japan, offering visually stunning sets that resemble dazzling jewelry boxes.

Tsujihan officially launched in Taiwan last July, settling on the B1 floor of Taipei’s Breeze XinYi Mall in Xinyi District. It simultaneously introduced four sets with Japan – “Plum,” “Bamboo,” “Pine,” and “Special Grade” – which immediately sparked long queues upon release.

The carefully selected ingredients at Tsujihan all come from the high-grade raw edible category of Hokkaido’s “Asahiichi Fisheries” in Japan. Using state-of-the-art professional freezing and preservation technology, they are delivered fresh directly from Japan to Taiwan.

In terms of cooking techniques, the “Yan” set breaks through conventions and innovations. Unlike other grilled seafood rice bowls on the market that individually sear and slice fresh fish, then lay them flat on vinegared rice, Tsujihan faced unprecedented challenges in developing its towering grilled seafood mountain. The challenge was achieving a perfect balance between the taste of grilling and the overall visual appeal, aroma, and texture.

The “Yan” set features a selection of nutritionally rich ingredients (including tuna, sweet shrimp, pine scallops, fish roe, squid, and other seafood types), all abundant in protein, Omega-3 fatty acids, and various vitamins. Small cubes of tuna are quickly seared on the surface with direct flame, then combined with sweet shrimp, pine scallops, fish roe, squid, and other seafood to build a seafood mountain, which is then grilled again using the same technique. This elaborate method is designed to fully condense and preserve the flavors and nutrients of the ingredients. It not only retains multiple rich textures—sweetness, crispness, and springiness—but also allows the fish fat to emit a fragrant aroma after grilling, elevating and blending the essence of the seafood delicacies to a whole new level.
