Ultraviolet, led by renowned chef Paul Pairet, retained its three Michelin stars. Each day, just ten diners enjoy a multi-sensory, immersive culinary journey ignited by 22 courses in a mysterious location.

In addition, the eight restaurants awarded two Michelin stars have received widespread acclaim for their outstanding performances. Among them, two restaurants were upgraded from one star to two stars this year. Ji Pin Xuan offers modern Cantonese cuisine with exquisite and ingenious cooking techniques—whether it’s soup simmered with spring water or meat grilled with honey from tropical primeval forests. Meanwhile, The Pine at Taian presents unique dining experiences to a limited 20 guests per day through the masterful creation of diverse original dishes by its chef.

Among the 31 one-Michelin-starred restaurants on the list, nine are newly added. Yu Zhi Lan offers a brand-new Sichuan cuisine experience; at Ming Court and Golden Dragon, diners can enjoy high-quality Cantonese flavors; while at Cheng Long Hang Crab King Mansion (Huangpu), guests can savor authentic Shanghainese specialties presented by the chef.

Food knows no borders—the list also features a variety of global cuisines: Da Vittorio brings authentic Italian specialties, while Maison Lameloise enchants with its French flair. Additionally, under the independent and anonymous evaluation of Michelin inspectors, Bao Li Xuan, Deer Garden (Pudong New Area), and Xin Rong Ji (Nanjing West Road) have also become newly listed one-star restaurants.
