And on this chilly winter day, what better way to embrace the season than with some hot pot? This Japanese chef-driven eatery, known for its seafood rice bowls, has launched a new hot pot dish. Today, we’re taking you and our scenic editor along for a taste test!

The Japan Bridge Seafood Rice Bowl, situated on the B1 floor of Breeze Xinyi Department Store, is a Japanese chef-driven restaurant specializing in fresh and delicious seafood rice bowls. On the eve of a cold Christmas, they introduced the “Soup-Frosted Fresh Fish & Vegetable Hot Pot.” Our scenic editor decided to treat herself.
They transformed the original contents of the seafood rice bowl into seafood croquettes.
This newly launched Fresh Fish & Vegetable Hot Pot is said to be a global exclusive, first introduced in Taiwan. The meal includes a fresh vegetable platter, sashimi-grade raw fish slices, ultra-luxurious seafood croquettes, salmon roe over white rice, and a dashi broth served with a small gas stove.

The seafood croquettes included in this set meal are absolutely over-the-top. The chef revealed that they contain up to eight types of seafood, including herring roe, angel shrimp, tuna, squid, surf clams, sea snails, and more—all sashimi-grade. Diners can enjoy them raw if they prefer, but our editor suggests cooking them for about five to ten seconds for the best flavor.
Broth is the soul of any hot pot.
Unlike typical Taiwanese shabu-shabu, the chef explained that the dashi for this Fresh Fish & Vegetable Hot Pot is made from fresh fish heads delivered directly from their place of origin, using a complex process involving up to 30 steps. Though our editor didn’t count all the steps, the broth is indeed rich and flavorful. And if you can’t get enough, you can refill your broth for free until you’re completely satisfied.
