Hunan cuisine is one of China’s eight major culinary styles, renowned for its delicate and versatile cooking techniques, with bold flavors from chili peppers, scallions, and garlic. Taking advantage of Taiwanese people's love for spicy and flavorful dishes, restaurants have launched the 【Authentic Hunan Cuisine】Hunan Food Festival from Apr 15–30, inviting chefs from Hunan to curate signature dishes and offer Taiwanese food lovers an authentic taste of Hunan cuisine.

The Regent Taipei has invited Chef Chen Ying, currently the executive chef at Sheraton Changsha Downtown Hotel in Hunan, who recently won the 2010 China Five-Star Hotel Hunan Cuisine Excellence Award. Proficient in traditional Hunan cuisine, Mao Family cuisine, Western Hunan Miao cuisine, and local Hunan flavors, Chef Chen has designed this special menu for Taiwanese diners.

Chef Chen Ying explained that Hunan is rich in produce with a wide variety of dishes and a strong emphasis on seasoning. Depending on the nature of the dish, some are quickly seared to bring out the flavor, others are simmered gently, some are seasoned before cooking, and some are flavored during the cooking process. Due to the region’s mild and humid climate, Hunan cuisine emphasizes sour and spicy flavors, which are particularly appetizing and refreshing. Among the three major cooking techniques—hot cooking, cold preparation, and sweet seasoning—dozens of methods have evolved over time. Famous dishes include Preserved Meat Steamed Together, Zuyan Shark’s Fin, Changsha Spicy Shrimp, Western Hunan Bandit Duck, and Rock Sugar Lotus Seeds.
