The Taste of Tainan Hometown: It's Not Just Flavor, But Also Memories in a Bowl of Pan-Fried Spaghetti

Tainan has a wide variety of street snacks, and pan-fried spaghetti is one of the more classic local delicacies. In particular, I (Dakou) am a huge fan of pan-fried spaghetti—I’d love to try every version in Tainan all at once if I could. Recently, a local friend offered to take me to “Xiao Dou Dou,” a place serving the local flavor they’ve enjoyed since childhood. I especially love it when locals show me around, so without hesitation, we set off right away.

“Xiao Dou Dou” has a simple red-and-white awning, and the sign isn’t very eye-catching. But everyone still knows exactly where to go. As soon as we stepped inside, we were greeted by a packed crowd. Now let’s take a closer look at what makes “Xiao Dou Dou’s” pan-fried spaghetti so special.

%The entrance of this humble place isn't right on the bustling main road but tucked away on a slightly elevated side street. Most of the patrons here are locals. Naturally, we had to check out what the fuss is all about among the locals.

%The space is quite small and not particularly fancy because it’s a place that values speed over ambiance. When you’re there, you can see a few people waiting outside, some even chatting with those already dining. It’s all very down-to-earth, and that’s exactly what gives the food its comforting charm.

%The food here is served quickly, and the taste is nostalgic. It’s said that Xiao Dou Dou was established in 1970. Locals love to come here for a bowl of pan-fried spaghetti paired with Lu Wei (braised meats), or toast with shaved ice or black tea—it’s practically the perfect afternoon tea combo.

%There’s a lot on the menu—ranging from shaved ice, snowflake jelly, tofu pudding, juices, fruit platters, cold drinks, toast, noodles/rice dishes, pickles, and Lu Wei. It looks like it’ll take several visits to try everything.

%If you come here, you must try their signature bowl of pan-fried spaghetti (NT$65)! As soon as the dish arrived, the generous portion made our appetites soar.

%The pan-fried spaghetti comes topped with ham, luncheon meat, pork liver, spam, peas, corn, and pickled mustard greens. What really stands out is the pork liver—it’s incredibly tender and flavorful. The dish also includes a soft-boiled egg that’s just perfectly cooked. The yolk is creamy and adds a rich texture to the dish. This is truly authentic local fare.

%The spaghetti itself has a different color than expected—it’s slightly yellowish, which isn’t common. It has a brighter hue and a chewier texture. Although it’s fried pasta, it still retains a nice bite, which is pretty unique.

%The pork slices are also sliced super thin and melt-in-your-mouth tender. When soaked in the savory broth, it’s simply divine. The shrimp, though not large, are sweet and tasty, and overall, the ingredients are fresh and delicious.

%There’s also a tomato-based egg drop soup (NT$15) that’s also quite good. It has a strong old-school flavor. According to my friend, it’s a type of black tea that Tainan locals absolutely love. It has a slightly cassia seed-like aroma, is mildly sweet, and tastes great.

%This time, I also tried their pickled mustard greens, which are quite sour and refreshing. Even friends who aren’t usually into pickled foods ended up enjoying this dish.

%The black tea that comes with the meal (NT$15) is also quite impressive. It has a strong old-fashioned taste. According to my friend, this is a type of black tea that Tainan folks are particularly fond of. It has a somewhat cassia seed-like fragrance, is slightly sweet, and very pleasant to drink.

%This experience really brought back childhood memories for me. I felt a sense of nostalgia I hadn’t felt in ages. Being in an atmosphere like this, the flavors seem to carry a deeper meaning, allowing you to truly feel the importance of tradition.

The retro vibe of “Xiao Dou Dou” and the hearty portions of its pan-fried spaghetti continue to attract many locals. Especially the sweet and savory broth paired with the Q-textured, springy fried spaghetti, along with the overflowing variety of toppings—it’s truly a satisfying meal. I noticed that my Tainan friends are very fond of these traditional old shops. When asked why, they often reply with a meaningful smile: “We’re not just eating flavors, we’re eating memories.” It made me really envious.
