The dining brands under Kanpai Group—Black Hair House and Old Kanpai—began selling A5 Miyazaki wagyu on October 11, while Kanpai Yakiniku Izakaya launched theirs on October 18. Black Hair House serves it as sukiyaki and shabu-shabu, Old Kanpai offers freshly sliced ribeye steak, and Kanpai Izakaya will start selling thinly sliced wagyu sirloin on November 18, allowing Japanese wagyu enthusiasts to enjoy it without flying to Japan.

Black Hair House offers A5-grade Miyazaki beef as sukiyaki and shabu-shabu. Japanese wagyu sirloin is also well-suited for these cooking styles. For shabu-shabu, Deputy Chef Wu Yongzhi of Black Hair House recommends keeping the broth temperature around 90 degrees Celsius (not boiling), then lightly swishing the meat until it reaches medium-rare for the best texture. As for sukiyaki, the Miyazaki beef is first placed in a cast-iron pot, where its own fat renders to bring out the aroma, before sukiyaki sauce is added. The meat is eaten first, followed by the other ingredients.

Kanpai Yakiniku Izakaya will officially launch A5-grade Miyazaki beef “thinly sliced wagyu sirloin” on October 18. Deputy Chef Liu Weizhong noted that wagyu sirloin has evenly distributed marbling and tender meat. For grilling, medium-rare is ideal—grill one side until golden brown, then flip and grill briefly on the other side.
