The State Guest Triple Towers Jointly Launch the Guizhou Food Festival, Showcasing Authentic Guizhou Cuisine

This year, The State Guest Hotel has collaborated with the Taiwan Visitors Association and the Guizhou Provincial Tourism Association. In addition to conducting research trips to Guizhou, the hotel’s culinary team also engaged in a cooking exchange with chefs invited to Taiwan by the Guizhou Tourism Association. From July 17 to July 26, the “Guizhou Food Festival” will be jointly presented at Taipei’s State Guest Szechuan Restaurant, Hsinchu’s State Guest Nine Floors, and Kaohsiung’s State Guest Szechuan Restaurant.

The Guizhou dining habit of “dipping sauce,” or “zhan shui,” refers to the various dry or liquid chili sauces paired with different Guizhou dishes. For example, one of Guizhou’s signature snacks, “Guiyang Siwawa,” is enjoyed with a sauce made from peanuts, chili powder, soybeans, balsamic vinegar, and soy sauce. “Guiyang Tofu Balls” are also served with a dip made from pickled vegetables, pickled radish, cilantro, garlic, scallions, and balsamic vinegar. Due to Guizhou’s karst topography, which makes farming difficult, the region mainly cultivates short-root plants, giving rise to a rich culture of spices. Dishes featured in this festival such as “Guizhou Fermented Chili Crispy Fish” and “Kaili Sour Soup Fish” use fermented chili peppers. Meanwhile, the dipping sauce for “Guiyang Siwawa” and the seasoning for “Huaxi Beef Noodles” incorporate roasted chili powder.

During the “Guizhou Food Festival” from July 17 to July 26, the State Guest Hotel’s Taipei, Hsinchu, and Kaohsiung branches will not only offer à la carte dishes such as Guiyang Siwawa, Guizhou-style Live Sand Shrimp, Duyun Secret-Recipe Ribs, and Guiyang Tofu Balls, but will also feature authentic Guizhou specialties like Highland Gastrodia Robust Sweat Chicken, as well as new Guizhou creations like Tungtung Sauce Pepper Lobster with Moutai Foie Gras... A private room set menu is available at NT$2,080 per person.
