Hokkaido is the birthplace of miso ramen, but with the booming ramen scene in Japan, the region offers more than just miso ramen. Japanese website tsunagu Japan has listed 12 must-visit ramen shops in Hokkaido, one of which is Ichigen Ramen known for its rich sweet shrimp broth. You don’t have to go all the way to Hokkaido to try it, as Ichigen is set to launch in Taiwan in September.
The 12 must-try ramen shops in Hokkaido are as follows:
1. Shrimp Ramen Ichigen:Ichigen Ramen’s broth is made by simmering sweet shrimp heads, and its rich umami flavor attracts many ramen enthusiasts. Ichigen is set to launch in Taiwan in September.
2. Yanabei:Uses Nagoya native chicken to brew the ramen broth, resulting in a refreshing taste with a distinct chicken savoriness.
3. Gyōza to Ise no Jō:Features an unusual ingredient in the ramen — Chinese cabbage.
4. Sheraton:Its standout feature is the generous heap of green onions on top of the ramen, and its signature style is miso ramen.
5. Ayami:This ramen shop’s flavors are inspired by Sumire and are beloved by both tourists and locals.
66. Thursday:The broth is made by simmering dried fish, and the noodles are made from whole wheat, offering a satisfying chew. The signature dish is “Dried Fish Soy Sauce Ramen.”
7. 175°DENO0 Tantan Men Honkan:This shop’s standout feature is the addition of Sichuan peppercorns to the noodles.
8. Kitayama Ryū:This is a style of Asahikawa ramen; after finishing the noodles, don’t drink up all the broth — you can hand it to the staff to cook it with rice into a zosui rice porridge.
9. Zero (零):This shop is known for its generous portions of ramen, and the signature dish is “Grilled Pork Loin Ramen.”
10. Ame wa Yasashiku (Gentle Rain):The shop uses dried fish and seasonal vegetables to simmer the broth, giving it a unique flavor.
11. Ginparusu Sapporo Shop:The broth is made from pork bones, and its standout feature is the generous sprinkling of sesame seeds on the ramen.
12. ?eiji Hiragishi emphasizes that their shop does not use chemical ingredients, using fish and pork bones to brew their signature "seafood and pork bone soy sauce" broth, which is the highlight of the store.
