Following the success of meat import company “Mei Fu” in the F&B market with the launch of Fresh&Aged Steakhouse and Ai. Aged 21 Beef Noodles, the brand is now venturing into the department store food court scene. Its first off-site noodle outlet will be located in the food court on B2 of Taipei’s Shin Kong Mitsukoshi Hankyu. As the Hankyu B2 food court is one of the most competitive dining hubs, bustling with visitors but also home to popular eateries such as Tsukumo, Mitsuba Ramen, and Masamasa Pork Cutlet, Ai. Aged 21 Beef Noodles faces a major challenge in drawing crowds. The Hankyu store of Ai. Aged 21 Beef Noodles officially opens on August 31.
The standout feature of Ai. Aged 21 Beef Noodles is its broth, simmered using PRIME-grade dry-aged beef trimmings, beef bones, chicken bones, and vegetables, creating a uniquely aromatic flavor. Wang Chieh-Chou, Special Assistant to the General Manager at Mei Fu International, explained that around 30% of the exterior of dry-aged steaks is typically trimmed off—though not spoiled, this meat is usually discarded. Utilizing it for beef noodle broth not only reduces waste but also results in an exceptionally fragrant and richly flavored broth, distinct from the heavy and oily taste common in traditional beef noodles.
For its new Hankyu location, Ai. Aged 21 Beef Noodles has launched an exclusive product: the “Powerful Mini Tomahawk Beef Noodles.” Featuring the uniquely bone-in flavor of mini tomahawks—only eight per cow (two per bowl)—paired with chewy beef tendons and the signature dry-aged broth, priced at NT$280. In addition to the limited-edition option, the chef’s recommended dish is the Red-Braised Essence of Beef Noodles, which combines premium cuts including American beef ribs, Wagyu brisket, boneless short ribs, Australian beef tendons, and Australian tripe—offering a taste of all the best parts in one bowl, priced at NT$555.
Other noodle options at Ai. Aged 21 Beef Noodles include Ultra-Aged (NT$355), Half-Tendon Half-Meat (NT$195), the Legendary Beef Trinity (NT$220), Brisket Supreme (NT$180), Wild Beef Ribs (NT$280), Tomato Snowflake Wagyu Beef (NT$280), Tomato Wagyu Beef (NT$250), as well as three pork-based options for non-beef eaters: Braised Pork Knee (NT$250), Braised Tomato Pork Duo (NT$250), and Braised Tomato Snowflake Pork Duo (NT$280).
