Songyang Pancake
Songyang Pancake
Eating pancakes during the Dragon Boat Festival is one of the traditional food customs in Songyang. The Songyang pancake is known for its thin skin and refined fillings. During the festival, people often prepare fillings by chopping and stir-frying ingredients such as wood ear mushrooms, shiitake mushrooms, daylilies, bamboo shoots, bean sprouts, cucumbers, broad beans, dried tofu, fried eggs, pork, and snail heads, among others, to use as stuffing. The filling is then wrapped in a thin, round pancake made from flour and water. The pancake is rolled into a bamboo tube shape to make the dish. Nowadays, pancakes can be made all year round and are one of the most distinctive local snacks in Songyang.
