Wuqing Black and Green Mung Beans
The seeds of black and green mung beans contain eight essential amino acids required by the human body, with content ranging from approximately 0.24% to 2.00%. The fat content in mung beans is below 1%, and they are also rich in vitamins, minerals, and other nutrients. Black and green mung beans contain a variety of trace elements, multiple amino acids, iodine, selenium, branched-chain starch, soluble pigments, all of which are several times higher than those found in common crops.
Black beans have a protein content as high as 36%-40%, which is twice that of meat, three times that of eggs, and twelve times that of milk. They contain 18 types of amino acids, especially the eight essential ones needed by the human body. Black beans also contain 19 types of oleic acids, with unsaturated fatty acid content reaching 80% and absorption rates exceeding 95%. In addition to meeting the body’s fat needs, they also help lower blood cholesterol levels. Black beans contain almost no cholesterol, only plant sterols, which are not absorbed or utilized by the human body and can inhibit the absorption of cholesterol, thereby reducing its content in the blood. Therefore, regular consumption of black beans can soften blood vessels, moisturize the skin, and delay aging. They are particularly beneficial for people with hypertension, heart disease, and similar conditions. Black beans are also rich in trace elements such as zinc, copper, magnesium, molybdenum, selenium, and fluorine, all of which are very important for delaying aging and reducing blood viscosity. The coarse fiber content in black beans is as high as 4%. Regular consumption provides dietary crude fiber, promotes digestion, and helps prevent constipation. Black beans are sweet, mild, and non-toxic in nature. They are known to invigorate blood circulation, promote urination, dispel wind, clear heat and toxins, nourish the blood, and support health while darkening hair. As stated in *Compendium of Materia Medica*: “Black beans have many benefits for kidney function, thus they can treat water retention, reduce bloating, relieve gas, counteract wind-heat, invigorate blood, and detoxify.”
