Zhujiajiao Braised Pork
Zhujiajiao braised pork is a famous local specialty of Qingpu, known for its delicious taste.
The boneless pork leg with skin is boiled in hot water until cooked, then seasoned with salt and MSG. After cooling, it is tightly wrapped in clean gauze and bound securely with cotton thread (the type used for wrapping zongzi), the tighter the better. It is then placed in the freezer for about half a month before being taken out. For a chewier texture, bind it tightly and let it sit for a few more days. It can be sliced and served directly after being taken out.
