Chicken Rice Claypot
Ingredients: Half a chicken, several slices of ginger, three green onions cut into short sections, one teaspoon minced garlic, one and a half tablespoons fermented black beans, eight ounces lettuce, sugar, dark soy sauce, salt, star anise, cinnamon, tangerine peel, cornstarch, and appropriate amount of water. Preparation: 1. Clean the chicken and pat dry, then chop into pieces. Add half a teaspoon of dark soy sauce and one teaspoon of cornstarch, mix well and marinate. Heat two tablespoons of oil, sauté ginger, minced garlic, and fermented black beans, then add the chicken and stir-fry to combine. Add one tablespoon of cooking wine, seasonings, and bring to a boil. Simmer over low heat for about ten minutes, then thicken the sauce. Remove star anise and cinnamon, then turn off the heat. 2. Wash and cut the lettuce into sections, place in the claypot, then put the chicken on top of the lettuce and sprinkle with green onions. Bring to a boil. Cook rice in another pot, then transfer the cooked rice into the chicken claypot and simmer for a few more minutes. Serve directly in the claypot.
