Shanghai Pig Blood Flat Bean
Pig Blood Flat Beans have a crisp, tender texture, aromatic and glutinous flavor, and become soft easily when cooked. As a vegetable dish, they possess two distinctive qualities that set them apart from other flat beans: First, they are late-maturing, offering a harvest period lasting up to four months from late summer to early autumn. This allows them to hit the market during National Day celebrations and after most autumn vegetables have disappeared from shelves in October. Additionally, with most flat beans, if picked too early before the seeds have formed, stir-frying yields only the taste of the pod; if harvested too late after the seeds have fully developed, the pods become fibrous. Pig Blood Flat Beans, however, remain tender even when the seeds are fully formed, making them still suitable for stir-frying. They can be enjoyed simply stir-fried as a vegetarian dish or cooked with meat to create a savory meal.
