Ingredients: 1300g wheat flour, 750g pork (fat and lean), 1500g shepherd's purse, 25g yellow wine, 40g salt, 25g white sugar, sesame oil, 15g monosodium glutamate, 40g refined lard.
Preparation Method:
1. Make wonton wrappers from the flour. Wash the shepherd's purse, blanch in boiling water, then rinse with cold water and squeeze dry. Chop finely. In the minced pork, mix in fine salt, white sugar, yellow wine, monosodium glutamate, sesame oil, and 150g water. Stir well until elastic, then combine with chopped shepherd's purse to make the filling.
2. Place a wrapper in the palm of your left hand, put the filling in the center, and fold to form a large wonton.
3. Bring water to a boil in a pot, gently slide the wontons into the boiling water. Use the back of a spoon to lightly stir along the edge and bottom of the pot to prevent sticking. Once the wontons float to the surface, add some cold water and cook for another moment before scooping them out into bowls (bowls should be pre-filled with hot broth and lard).
