The Origin of Hot Pot: There are currently two theories about the origin of hot pot. One suggests that during the Three Kingdoms period or the era of Emperor Yang of Sui, the "bronze cauldron" was the precursor to hot pot; the other claims that hot pot originated in the Eastern Han Dynasty, with the term "dou" (斗) found in unearthed artifacts referring to hot pot. The Book of Wei records that during the Three Kingdoms era, when Cao Pi replaced the Han and declared himself emperor, bronze hot pots had already appeared. By the Northern and Southern Dynasties period, hot pot became popular in the cold region of Heilongjiang, where people used it to cook various meats such as pork, beef, lamb, chicken, and fish. Later, as China's economy and culture developed and cooking techniques advanced, a variety of hot pot styles emerged.
