Golden Toad Presenting Treasure
Golden Toad Presenting Treasure is a specialty dish from Changchun, Jilin. Eight lotus leaf-shaped items made from spinach juice and wheat starch are placed around the edge of the plate. Boiling water is added to a wok to blanch the forest frog, which is then removed. Next, the wok is filled with oil and heated to 40–50% temperature, and the forest frog is quickly deep-fried and taken out. The remaining oil in the wok is heated, garlic cloves are fried until fragrant, and chicken stock, soy sauce, salt, and MSG are added. The forest frog is placed in the wok, brought to a boil over high heat, the foam is skimmed off, then the heat is reduced to simmer until the frog is tender and the sauce thickens. A cornstarch slurry is added to thicken the sauce, and sesame oil is drizzled before serving. The dish is arranged on top of the eight lotus leaf shapes. Separately, soaked forest frog oil, white fungus, goji berries, and water are added to the wok along with rock sugar, brought to a boil, then simmered over low heat for ten minutes until the sauce thickens. This mixture is served in a bowl and garnished with parsley and carrot flowers.
