Autumn Harvest
Pine nuts, also known as sea pine nuts or Silla pine nuts, are the seeds of the Korean pine (Pinus koraiensis) from the Pinaceae family. The kernels can be used medicinally, with a mildly sweet and warm nature. They are known to moisten the lungs and relieve constipation. According to *Běn Jīng Féng Yuán*, "Their sweet and moistening properties benefit the lungs." Pine nuts are also highly nutritious, containing fats, proteins, carbohydrates, calcium, phosphorus, iron, and more. In terms of culinary value, they can enhance the aroma and flavor of dishes, earning them the title of "culinary delicacy among fruits."
Characteristics: Rolled in sweet bean paste and coated with pine nuts, then deep-fried to create a sweet and delicious taste.
Preparation: Twelve gourds are made from mashed yam. Sweet bean paste is shaped into balls, coated with flour and egg wash, and pine nuts are formed into balls. The gourds and pine nut balls are deep-fried, then removed and arranged on a decorated plate to finish.
